Roasted Butternut Squash

It is the season for squash. I love the natural flavor of fresh butternut squash so much, that I cooked it purely...almost.

Ingredients
1 Butternut Squash
1 tbsp of Ground Ginger
Extra Virgin Olive Oil (to coat)
Sea Salt (to taste)

  1. Preheat the oven to 425 degrees. 
  2. Cut the squash into quarters lengthwise. Peel off the skin. 
  3. Cut the pieces into 2-in cubes. 
  4. Sprinkle in ginger and salt. Drizzle in olive oil. Toss to coat. 
  5. Cook covered for 30 minutes or until fork tender. 
**If you are cooking something else already, you can put this in the oven, just adjust the cooking time depending on temperature.
