Simple Balsamic Artichoke Heart Salad
I love all of these ingredients, so I put them together for a nice balsamic-marinated salad. I keep it super simple with the spices, because these veggies have really complex flavors.
Ingredients
1 Can Medium Artichoke Hearts
1 Small Can Sliced Black Olives
1 Medium Red Bell Pepper
1 Medium Green Bell Pepper
1 Medium Tomato
1/2 Small Red Onion Sliced Thin
1/4 c Regular Balsamic Vinegar
Salt and Pepper to taste (remember the ingredients are pretty salty, so don't use much salt)
This doesn't get soggy or rubbery, so it stays fresh for a while.

- Slice and dice up the fresh veg, and open cans.
- Mix vegetables together.
- Drizzle the balsamic vinegar over the top, and add salt and pepper.
- Mix well and let marinate overnight.
- Taste it in the morning and see if you need more salt or pepper.
This doesn't get soggy or rubbery, so it stays fresh for a while.
