Smoked Pork Chops and Cabbage

This was good comfort food for an interesting week. For this one, I employed my crock pot. I had gotten some amazing smoked pork chops from the butcher and a nice head of cabbage for $1.


Ingredients
1/2 head of Cabbage
2 - 2in Cut Smoked Pork Chops (regular chops would do if you had some smoked salt)
1 tbsp of Coriander Seeds
2 tbsp of Red Pepper Flakes
1 tsp of Coarse Ground Black Pepper
2 tbsp of Apple Cider Vinegar


Roughly chop the cabbage. Since it will be stewing, it can be pretty large chunks. Grind up the coriander with the red pepper flakes.  Add the cabbage and 3/4 of the mixture into the crock pot. Stir well. Add in apple cider vinegar. Add pepper and remaining coriander and red pepper flake mixture to the pork. Add pork over the cabbage in the crock pot. Cover and cook on high for 4 hrs and low for 2 hrs.  Serve with as much Hungarian paprika as you like.
