Roasted Butternut Squash
It is the season for squash. I love the natural flavor of fresh butternut squash so much, that I cooked it purely...almost.

1 Butternut Squash
1 tbsp of Ground Ginger
Extra Virgin Olive Oil (to coat)
Sea Salt (to taste)
- Preheat the oven to 425 degrees.
- Cut the squash into quarters lengthwise. Peel off the skin.
- Cut the pieces into 2-in cubes.
- Sprinkle in ginger and salt. Drizzle in olive oil. Toss to coat.
- Cook covered for 30 minutes or until fork tender.
